Kitchen Planning & Design

Layout answers where things go. Planning answers whether the kitchen can actually produce what the business plan promises — at peak, on the worst day, with the staff you can realistically hire. We size the kitchen against throughput rather than floor area.

How it works

The process

Each stage produces something you can review before the next one begins — which is what keeps surprises off the site.

  1. Throughput modelling

Covers per hour at peak, menu mix, batch sizes and service times establish the real production load rather than an assumed one.

  2. Capacity sizing

Cooking, refrigeration, preparation and wash-up capacity are each sized against that load, with the binding constraint identified explicitly.

  3. Space allocation

Floor area is allocated by function against the sized capacity — which sometimes means telling you the room is too small for the menu.

  4. Phasing and expansion

Where growth is planned, we mark what expands later and reserve the utility capacity for it now, which is far cheaper than retrofitting.

Scope

What is included

  • Peak throughput and menu-mix analysis
  • Cooking, refrigeration and wash-up capacity sizing
  • Staffing and workstation count estimate
  • Utility load summary for the MEP consultant
  • Phased expansion plan where applicable
  • Equipment budget range by category
Why it matters

What you get out of it

Right-sized capital spend

Kitchens are routinely over-equipped in one area and starved in another. Sizing against throughput puts the money where the constraint actually is.

Honest feasibility

If the room cannot support the business plan, you find out during planning rather than in month three of trading.

Room to grow

Reserving utility capacity for a planned second line costs very little now and saves a shutdown later.
